How to Balance Authenticity and Orderability

Authenticity and orderability should not be treated as opposites. The practical problem is how to preserve the dish while explaining it well enough for the diner to choose it.

Balance rules

Problem Better approach
Unfamiliar dish name Keep the Chinese name and add a functional English explanation.
Unfamiliar ingredient Explain texture and flavor, not only origin.
Strong flavor Tell diners what kind of strong flavor it is: sour, numbing, fermented, bitter, herbal, smoky, or spicy.
Offal or bones Disclose plainly rather than surprising the diner.
Regional dish not adjustable Say why it cannot be made mild, sweet, boneless, or sauce-free without changing the dish.

This dish is served in a traditional style with bones and chile oil.
It is best for diners who enjoy strong Sichuan flavors.
It cannot be made boneless, but the spice level can be reduced.
