American Chinese Recipe

Crab Rangoon

Crab rangoon is an American Chinese appetizer of wonton wrappers filled with cream cheese and crab or imitation crab, then fried until crisp.

Why this dish works

The dish teaches that American Chinese menus include dishes shaped by American dairy, frying, and appetizer culture. It is not a regional Chinese dumpling.

Menu-literacy notes

  • Crab rangoon: a Chinese American appetizer, not a traditional regional Chinese dish.
  • Dairy: cream cheese makes it unsuitable for many dairy-free or kosher meat meals.
  • Shellfish: crab or imitation crab can matter for allergies and kosher rules.
  • Wrapper: wonton wrappers usually contain wheat.

Variations and substitutions

  • Use imitation crab for the common takeout style.
  • Bake or air-fry for a lighter version.
  • Use chopped water chestnuts for crunch.
  • Make a crab-free cream cheese wonton version.
